AlexH 0 Posted January 2, 2010 ...so for the next course I wanted something that would warm us up for winter and let me use some of my Chocolate Habaneros so I decided on this... Oxtail Stew One oxtail (about 1.5kg) 1 Onion (chopped small) 2 cloves garlic (chopped small) 250 dried white beans soaked for at least 8 hours (butter beans would be best but I used Canelli) 3 carrots (thickly sliced) 1 tin tomatoes 2 spring onions (sliced) 2 sprigs of Thyme 3 bayleaves 1 teaspoon of Jamaican pepper (allspice) 4 or 5 cloves 2 Chocolate Habaneros (I was thinking of the children so stopped at two... of course you could keep going!! ) 1 litre stock salt Brown the oxtail in oil, take it our of the pan and fry the onion, garlic, cloves, thyme and bayleaves. Put the meat back in the pan and add the stock (it should just cover the meat). Bring it to the boil and let it simmer for 2 or 3 hours. Then add the beans and allow to cook for another hour, then the tomatoes and carrots and crushed allspice and cook for another 30 minutes, finally the spring onions and of course the habaneros! cook for another 10 minutes (this way the real flavour of the habanero is still obvious ) serve it with buttered rice and spinach. ...enjoy!
