kibaumm 1 Posted August 15, 2011 Ciaaoo tutti!!! domenica era la festa del papà, così ho fatto il pranzo per mio padre! pesce in foglia di banana con salsa di mango!! ingredienti 2 filetti di pesce 500g (io ho usato il pesce gatto, un pesce d'acqua dolce brasiliano) aglio cipolla pepe limone sale sala carribbena di mango 1 mango, grattugiato cipolla aglio pepe( ha usato 1 choco) 50ml latte di cocco mettere la cipolla haba choco l'aglio a rosolare, aggiungere il latte cocco e mango . cuocere per 5 minuti! pesce!!! Da noi le foglie di banano non sono così comuni, le spezie invece sì, magari possiamo fare la variante in foglie di anice stellato che proprio adesso e al masimo, cambiando il pesce con il rombo, anche una palamita andrebbe bene con gli odori. Sempre in tema, consiglio ai più arditi di provare un buon filetto di tonno, fatto stufare con odori molto simili, ma con una varianrte, accartocciato in foglie di senape con dentro tutti gli odori, Sembra di mangiare un tonno balsamico......... Alla fine chi rimedia le foglie di banano ??? Personalmente ci metto il pesce fresco, di mare, vanno anche bene crostacei a taglia media o molluschi per i palati più fini, ma vaaaaaaaaaaaaaaaa Share this post Link to post Share on other sites

The mango sauce is a hot caribbean sauce. I use 1 mago (tommy) 50ml coconut milk 1/2 onion 1 teeth of garlic 1 habanero chocolate the fist step is scraping the mango, in a pan put 1 teaspon of butter, add the sliced onion, garlic and habanero choco, when the onions stay transparent, add the coconut milk and the mango, cook for 5 minutes! this sauces needs to go hot! about the fish, I live in a city 500km far from ocean! I AWAYS use fresh fish!! I SAY AWAYS!! I only eat fish from the same day, 1 day after cath is not fresh for me! so here the better option is this fish "surubim". do you have eat this fish? here in brazil this is a very special and rare fish! here cost 15,00 euros a kilo! the tuna cost only 3,50 euros per kilo! this fish was capture in the night and i cooked 11 AM, when i put in the grill they stay almost alive! ahahahha the original recipe for this is use mahi-mahi a fish from atlantic ocean! about the leaf i really dont now what to do... some leaf is toxic, have a really bad tasty or "broke" when put in grill! the banana leaf is very comun in america, In my farm i have more the 1000 banana plant.. so banana leaf is really comun here! I never see this dish cooked in other leaf! the real secret of this recipe is that the fish dont grill, they "cook" inside the leaf! this give a very special and unique flavor!
