Crab & Chilli Risotto

This is a first for me... although I love Italian food I have never posted an "Italian" recipe on the forum before, but this was very tasty so I wanted to share it with you...! I hope you enjoy it :good:

 

Ingredients for 2 as a large dish, or 4 as part of a meal

 

1 large boiled crab - remove all of the meat (in the UK we call it white meat and brown meat) then keep the shell etc to make the stock

Risotto Rice (I used Carnarolli) 1 cup

1 onion (finely chopped)

red chillies - you decide the quantity, but you want something with a medium heat and some sweetness, I used the Chupe!

White wine 200ml

Watercress

Chopped chives

Butter

Salt & black pepper

 

Stock (brodo)

the shell of the crab (also some fish bones etc if you have available)

celery

onion

bay leaf

black peppercorns

Parsley

 

Method

 

Make the stock... allow it all to simmer for at least an hour to make sure the flavour is good!

 

Melt the butter and soften the onion. Add the rice and fry gently to ensure it is coated in the butter. Then add the finely chopped chilli.

 

Add the wine and stir into the rice until it is absorbed. Add the stock gradually and keep stirring until the rice is almost cooked.

At this stage add the crab meat and stir through until it is warmed through.

Add some salt and pepper to season, and then stir in some of the watercress, the chives, and some more butter.

 

Serve the risotto garnished with more watercress!

Ciao Alex, complimenti per la ricetta e anche per l'esecuzione e la preparazione.

Personalmente preferisco preparare i granchioni con gli spaghetti o le linguine, usando ingredienti semplici come olio, aglio, peperoncino, vino bianco e pomodorini.

Comuqnue il tuo risotto ha davvero un bel aspetto, ancora complimenti
