AlexH 0 Posted January 3, 2011 It's been quite a while since I posted a recipie... so here's one for the new year, and hopefully you'll like it! The Gumbo is a Cajun dish that has something in common with Brazilian Frango Com Quiabo: they need to be made with Okra (which gives the charachteristic slimy or "gummy" consistency to the sauce! ...otherwise there is really no set recipie ...you can use various combinations of meat, seafood, vegetables, herbs etc, so here's my version: (for 4 hungry adults) 1 small/medium chicken (around 1.5kg) jointed into 8 or 10 pieces 100g streaky bacon (or pancetta) sliced 100g chorizo (or spicy sausage) sliced 150g prawns/shrimp 1 onion (chopped) 2 garlic cloves (chopped finely) 4 celery stalks (Chopped) 1 green sweet (bell) pepper (chopped) 300g Okra (chopped in 2cm lengths) 2 bay leaves 1 sprig thyme 4 spring onion (scallions) sliced Chillies (I used a combination of Tabasco and Cayenne, but feel free to experiment!) 1 litre chicken stock salt & pepper Oil Method: Fry the chicken pieces and then remove from the pan. Add the chorizo and bacon and fry, and then add the onion, garlic and celery. Allow these to soften (about 10 mins) and then add the green pepper and herbs and chillies. Return the chicken to the pan, add the stock and cover. Allow to simmer for about 20 minutes. Then add the Okra and stir it in, allow to simmer uncovered for around 25 to 30 minutes (until the chicken is well cooked but before the Okra falls apart!). Finally stir in the prwans and the spring onions and cover with the lid and allow to cook through for about 5 minutes before serving. Serve with long grain rice, bread and hot sauce (Tabasco or home made! ...mine is a home made Louisiana style hot sauce with cayenne peppers, salt and vinegar that has been matured for a couple of months...
