AlexH 0 Posted August 1, 2010 ...for Paopao! This is a traditional indonesian sauce to serve with Satay skewers (beef or chicken)... it is a little bit complicated to make, but very tasty! Ingredients: 75g Thai red curry paste (made using the recipe shown here https://www.pepperfriends.com/forum/index.php?showtopic=3114 ) 75g dessicated (dried) coconut in a cup of boiling water OR 1 small tin of coconut milk 2 tablespoons peanut butter OR 50g peanuts (not salted) processed until very fine 1 tablespoon soy sauce (or fish sauce is even better!) 1 tablespoon oil (sunflower or peanut oil) 1 teaspoon tamarind disolved in half a cup of boiling water (if you can't find tamarind use juice of half a lemon and a little stock) 1 teaspoon brown sugar Fry the curry paste in the oil. stir for about 5 minutes then add the coconut. Continue to stir and simmer on a low heat for about 10 minutes. Add the peanut butter, tamarind, sugar and soy sauce, continue to stir on a low heat until the sauce is smooth and all of the flavours have combined (about another 10 minutes). Good luck!!
