AlexH 0 Posted June 13, 2010 This is a really simple side dish or "apperitivo"... For the sauce: 1 red pepper (sweet pepper) chopped small 1 or two spring onions chopped small Jalapeno chillies chopped small about 300g Tomatoes (either fresh, with skins and seeds removed) or tinned juice of 1 lime 1 teaspoon cumin seeds 2 teaspoons brown sugar Fry the peppers & onion in a little oil. When soft add all of the other ingredients and simmer for about 5 minutes. Allow to cool down. To make the nachos use plain corn tortilla chips, arrange them in a heat proof bowl or dish. Spread some of the sauce over the chips. Then cover them with grated cheese (use something that will melt well like swiss cheese or provolone) Put them under a very hot grill for a few minutes so that the cheese melts but the chips don't burn! ...you can serve them with more of the red salsa and also some green sauce ( https://www.pepperfriends.com/forum/index.p...ost&p=71633 ) if you like!! seemie 4 Posted January 25, 2011 they look delicious I prepare often nachos because my partner likes them: I usually stir fry some onions, beans, sausage, bell peppers, tomatoes, chili and spices (I always change the ingredients), I put them in a pan, then I cover with nachos and cheese. we eat them with yogurt and avocado Share this post Link to post Share on other sites
