Simple Texas Green Sauce

This is the sauce I served with the grilled quails ( http://www.pepperfriends.com/forum/index.p...ost&p=71632 ) and is also great with Nachos etc



Tomatillos: I used a small can (200g I think) because I don't yet have any fresh ones :lol: ...but if using fresh I think about 400g would be OK

1 or 2 spring onions

1 garlic clove

juice of 1/2 lime

a few corriander leaved (if you like them!)

Some sugar (cane sugar is perfect)

1 or 2 red chillies (I harvested my first Cayenne!)



To make the sauce, put all the ingredients in a blender and process until fine but not completely liquid



Then heat the sauce in a pan and simmer it for about 10 minutes to thicken it and combine the flavours



Allow it to cool down before using it
