Spicy sausage & beans

...I think this is post #1000 (! :D ) ...so it's right that it's a recipie! :D

 

This is a very quick and tasty dish that is perfect for a lunch or small evening meal. It is very simple because everything cooks in the same pot.

 

Ingredients (for 2 people)

 

about 200g spicy dried sausage: like the types from southern Italy, or also Spanish chorizo would be fine. (chopped)

1/2 an onion (roughly chopped)

2 garlic cloves (just chopped in half)

1/2 a red or yellow pepper (roughly chopped)

1 tin (400g) of canellini beans

1/2 tin of tomato pulp/pieces

small glass of red wine

some fresh thyme

olive oil

red chilli, fresh or dried (something with a smokey flavour would be perfect!)

Heat the olive oil, then fry the sausage and then add the onions and garlic. Let them brown slightly and then add the peppers & chilli. Let everything cook for a few minutes.

then pour in the wine and reduce a little. Then add the beans, then the thyme and tomato.

Add a little water if necessary, and let everything simmer for about 20 minutes until reduced and concentrated.

season with salt & pepper if required and then serve in a bowl with some fresh bread... :D
