"Frango com Quiabo"

Here is the "famous" Frango com Quiabo...!

 

...this is one of my favourite meals, and something I grew up with! ...the recipie has been slightly "adapted" from the true authentic version, but it's the way I love it!!!

 

Ingredients (for 4 people)

 

1 large chicken (cut into 8 portions) ...(in the photos I have a small chicken but also 2 extra legs!)

1 large onion (chopped)

3 garlic cloves (chopped fine)

about 300/400g Okra (chopped)

some diced pancetta/smoked bacon (this is not authentic, but my Mum always included it and I think it works really well!)

Chilli... it's not really a "hot" dish, but a few dried small red chillis or Malagueta work really well!

A squeeze of lime juice (optional)

500ml Stock (either a stock cube, or make your own from the left over of the chicken carcass)

First prepare all the ingredients, chop the chicken into pieces, chop the vegetables etc (N.B. don't wask the Okra in water, just wipe it with a damp cloth!)

Fry the chicken pieces in oil until browned, then put in a casserole dish...

Meanwhile, if you want, you can make a stock with the chicken carcass, adding also onion, celery and bay leaves...

drain any excess oil from the frying pan, and then add the onion, garlic and pancetta/bacon (if you decide to use it!) when they are softened/browning add them to the chicken pieces in the casserole dish...

Then fry the Okra, add a squeeze of lime to stop them getting too sticky!

(I just love the look of the Okra ...so here's a "close-up"!!!)

Add the Okra to the casserole dish, then add the stock and mix together, at this point add the chillies too!

Put it in an oven at around 180°C for about 40 minutes... (this is a good time to have a Caipirinha!)

Serve it with rice and "Angu" (the Brasilian version of polenta!)
