AlexH 0 Posted February 20, 2010 ...this is so simple and quick... but tasty! 2 medium zucchini (sliced) 6 or 7 eggs some mozzarella salt, pepper teaspoon of chilli powder olive oil Fry the zucchini in the olive oil, add the salt, pepper and chilli for a few minutes. Mix the eggs together & add the mozzarella (chopped small) then pour over the zucchini. Cook for about 5 minutes on the hob and then put under a medium hot grill for another 5 minutes (until golden brown) Serve with salad! Share this post Link to post Share on other sites
