AlexH 0 Posted February 11, 2010 A very quick (about 15 minutes) vegetarian recipe... Ingredients: (for 2 people) half an aubergine half a head of brocolli 1 carrot 1 onion 1 garlic clove piece of ginger 200g chinese noodles (cooked) sichuan pepper (or if not available don't worry, or use pink peppercorns) Oyster Sauce (about 50ml) soy sauce splash of white wine (or rice wine) asian red chillis (4 or 5... or more if you want!) Chilli oil Chop the vegetables into small pieces or sticks. Finely chop the garlic, ginger, and red chillis. Heat some of the chilli oil in a wok (or large frying pan). Add the onions, garlic, ginger, chilli and sichuan pepper, fry them for a few minutes on a very hot flame. Add the vegetables and continue to stir-fry on a hot heat for about 5 minutes until beginning to soften. Add the wine, oyster sauce and a splash of soy sauce, turn the heat down and allow to cook for a few minutes more. Add the cooked noodles and fry gently for another one or two minutes... then it's ready!!
