AlexH 0 Posted January 2, 2010 I decided to make a Caribbean "inspired" dinner for the family yesterday... here is the first course: "Stamp and Go" )fish fritters OK, so these should be made with salt fish but my kids (1 and 4) don't like it so I made them with some trout... The ingredients are simple ( you can see them all in the first picture) 120g plain flour 120g self-raising flour pinch of baking powder 1 egg pinch of Tumeric pinch of salt 200/300g cooked fish (flaked up) 1/2 spring onion (chopped finely) green chilli (use as much as you want ...I had the kids to think about so stopped at one!) sliced up 1/2 cup of milk mix the flour, egg then all other ingredients (except milk) together in a bowl. Add the milk slowly until you get a thick batter (you may need a bit more or less, depending on how much fish you use) Fry spoonfulls of the mixture in vegetable oil (turn them over after a couple of minutes) Serve them with salsa/tomato relish (I made one with green chilli and Jamaican pepper (allspice) which was quite tasty!) and a squeeze of lime juice.
