AlexH 0 Posted March 21, 2010 ...so making the curry paste is good... but using it is even better! Here's one way to use the red curry paste I made... Ingredients: (for 2 people) 200g raw prawns (peeled except the tail) 200g small squid or cuttlefish (cleaned) (or other seafood if you prefer!) 1 small tin of coconut milk 1 tub of red curry paste ( https://www.pepperfriends.com/forum/index.p...amp;#entry60145 ) Heat some oil in a wok and then fry the paste until it deepens colour and the aromas are very strong... At this stage add the coconut milk, and reduce the heat to simmer The colours will deepen and the oils will separate...(about 15 minutes) now you can add the seafood... Stir it in and increase the heat a little, as soon as the prawns tun pink it is done! You can serve it garnished with some lime wedges We had it with the Thai Cabbage salad ( https://www.pepperfriends.com/forum/index.p...amp;#entry60148 ), some prawn crackers, and some jasmine rice... We should think about it... Here in Carmagnola the right time would be, maybe, at the end of august or the beginning of september: that is, when the Sagra del Peperone takes place.
